An esoteric project highlighting winemaking techniques & the terroir of Samos: the most Westerly of the Greek islands. The Octave represents the 2nd in the Sous le Vegetal trilogy, here on The Grape Slayer, by legendary natty heads Patrick Bouju & Jason Ligas…supported by Clovis Ochin. Okto means 8 in Greek & the grapes come from 8 terraces of vines from 4 different terroirs: Schist, limestone, quartz & volcanic rock. An inspired representation of the mineral composition of the island of Samos! Shale delivers salinity, quartz brings freshness (acidity), volcanic rocks create austerity and limestone delivers tension. Direct press then racked & vinified in 750l anfora & 1.5l concrete cuves, this bone dry white calls for a breath of fresh air with a decant before drinking.
