Domaine des Lauriers proximity to the sea brings cooling breezes from the Thau Bassin, lending their wines a characteristic freshness which they aim to accentuate with a light hand & low temperature wine production. Deep red soil containing large pebbles reflects the sun & helps ripen the grapes, while on the hillsides you find water holding calcareous- clay soils, keeping the grapes hydrated even during dry Mediterranean summers. Grapes are destemmed & fermented in tank, keeping the 3 varietals separate. Post ferment they are drained off the skins to avoid too much tannin extraction & retain a lush fruity freshness before blending & bottling. The result is a supple little gem smacking of ripe red fruit, black cherry and a touch of pepper. Red fruit follows through on the palate chased by a hint of liquorice & the Terra Vitis sustainable approach, respecting the environment & enriching the terroir, makes it tastes even better!
