The Cabrol family own 45 hectares of vines surrounded by richly fragrant Mediterranean Garrigue, which imparts a stunning herbal quality to this lush drop. These guys are artisanal producers with a focus on retaining a steely freshness & the grapes are harvested at night, when it’s cool, & the 2 varietals are vinified separately before blending. Grapes are gently pressed in a pneumatic press to avoid extraction of harsh tannins or phenols before fermentation under inert gas. After 3 weeks the wine is transferred to tank to age on the lees for 3 months before blending. The result is a bright wine; crisp & fruity with white flowers & stone fruits showing on the palate. There’s an energetic zippiness with a lush acidity & sensual mouthfeel…perhaps the inspiration for the nawty label art alongside the tongue-in-cheek namesake: The Bright Side.  Crack open for a cheeky aperatif to whet the appetite or pair with light creamy dishes or sea food for the ultimate mouth party.
