An esoteric project highlighting winemaking techniques & the terroir of Samos: the most Westerly of the Greek islands. The Hupnos represents the 3rd in the Sous le Vegetal trilogy, here on The Grape Slayer, by legendary natty heads Patrick Bouju & Jason Ligas…supported by Clovis Ochin. The terraces of vines protrude from the slopes of a slumbering volcano & the grapes are harvested in the cool of the night…hence the perfectly apt name of Hupnos, or sleep, in Greek. 40 days of whole bunch maceration in stainless steel, before vinification & ageing in 500l futs, transforms this dry white skin contact wine into a fresh, textural mouthful of minerality. A long wide wine with a rolling candied fruit finish. Generous & sublime.
