Winemaker Tiago farms 8 high altitude vineyards on a plateau of schist, clay & granite at the top of the slope of Douro; 550-700m above sea level. Typical vineyards in the area lie on lower ground by the river but the cool night-time temperature, due the unique altitude of Tiago’s vines, lends a unique zippy acidity & mouth-watering freshness to his wines. This baby is a rippingly zesty, saline dream with honey & herbal notes from +35 year old vines. After hand-harvesting the grapes are partially de-stemmed but not pressed and allowed to macerate for 4 months. Spontaneous fermentation takes place in cement tanks (5kL) with ambient yeasts and lasts roughly 3 weeks under temperature control. The wine spends around 3 months on the lees after pressing with no stirring before ageing in cement tanks for 6 months.
