Vallone’s guiding principles in winemaking are excellence and innovation. They continue to experiment with winemaking techniques focusing on low yields and minimal human intervention with emphasis on quality of the fruit, careful extraction and low tannin.
VITICULTURE + VINIFICATION
The Cabernet Sauvignon vineyards for clone CS15 on Dogridge rootstock comprise of light topsoil with well draining sub soil followed by basalt rock. Training and trellising were done on a modified Lyre system and the vineyard location experienced slightly cooler temperatures during the maturation period, which allowed good acidity to be retained in the grapes
to make a refreshing Rose. After harvesting at 22 brix the grape were de-stemmed and pressed with no skin contact, to achieve the desired colour and light tannin structure. Cold settling was followed by fermentation at a low temperature in stainless steel tanks with fining using PVPP and filtration through 0.45 microns.
A light-bodied and refreshing wine with aromas of citrus, cantaloupe, tropical fruit and floral notes in harmony with hints of honey. The flavours follow-through to the palate with vibrant character and a clean finish.
