Set within 230 acres, Charosa are a prestigious producer of fruit forward new world wines. The creation of fine Charosa wine is based on the fusion of science, art and winemaking techniques unique to the territory, with open tank fermenters being pioneered for the first time in India.
VITICULTURE + VINIFICATION
This Block of Cabernet Sauvignon vines rest on red laterite soil, 750m above sea level. High in iron oxide and aluminium, the gentle slopes ensure good
drainage. Grapes were handpicked once they achieved 23 Brix, chilled to 8° C immediately after harvest then taken for de-stemming and crushing the next day. After de-stemming, 5.5m open top fermenters were filled with 50% whole berries and 50% slightly crushed berries through specially designed gravity flow conveyors.
Inoculated initially with bayanus yeast, the fermentation was completed with cerevisiae- FX-10 yeast. Cap management was handled with regular delicate pump overs, some plunging and rack and return. Once fermentation was complete the tank was pressed using a hydraulic press and filtered through 0.8 microns without any fining. After proportionate blending, the wines were aged for almost 15 months in a mix of new and one-year old French oak then bottled.
Dark ruby red with complex aromas of ripe fruits, black olive, vanilla, eucalyptus, chocolate and a hint of sweet spice. On the palate, this full-bodied wine is rich yet soft, expressing ripe plum & raspberry and finishes with well balanced tannins.
