VITICULTURE + VINIFICATION
Both the Cabernet Sauvignon and Shiraz vines benefited from Y- shape trellising planted in soils of medium to deep black sandy loam. After hand harvesting at 22 Brix, the Cabernet was inoculated with L2226 Lalvin yeast and macerated for 8 days at 18-20ºC. The wine then underwent maloactic fermentation with VP41 yeast and was aged in medium toasted French oak barrels for 6 months.
The Shiraz was hand harvested at 23 brix, inoculated with D254 Lalvin yeast and macerated for 10 days at 18º. Maloclactic fermentation was performed with VP41 yeast in a 5000l stainless steel tank with 1 month contact with medium tasted oak chips.
The final blend consists of 60% Cabernet and 40% Shiraz, both fined with reduless and filtered through 0.45 microns
Deep red with concentrated aromas of plums, blackcurrant and spice. Well structured, with velvety tannins highlighting rich red fruit flavours and an elegant finish.
