Livia ‘18

The Livia represents the 1st in the Sous le Vegetal trilogy by legendary natty heads Patrick Bouju & Jason Ligas, supported by the iconic Ochin Clovis. From a tiny plot on the side of mount Karvounis, grape juice is pressed then racked before vinifification in 500lt fûts and 5,000lt stainless steel tanks. This stunning dry white reflects the salinity of schist and the freshness of quartz. The iodised aromas of Muscat (a typically aromatic varietal smacking of lychee, marmalade & hay) are elegant, avoiding any cloying traits of the grape. A long and ample wine prolonged by a greedy, wide finish…the mouthful that keeps on giving. Decanting recommended- nothing fancy needed, just knock some air into her. She needs a breath after her confinement for optimum sipping…

Octave ‘18

The Octave represents the 2nd in the Sous le Vegetal trilogy. Okto means 8 in Greek & the grapes come from 8 terraces of vines from 4 different terroirs: Schist, limestone, quartz & volcanic rock. An inspired representation of the mineral composition of the island of Samos! Shale delivers salinity, quartz brings freshness (acidity), volcanic rocks create austerity and limestone delivers tension. Direct press then racked & vinified in 750l anfora & 1.5l concrete cuves, this bone dry white calls for a breath of fresh air with a decant before drinking. Let her unfurl for half an hour to shine to her full potential.

Hupnos ‘18

The Hupnos is the final third of this epic trilogy. The terraces of vines protrude from the slopes of a slumbering volcano & the grapes are harvested in the cool of the night…hence the perfectly apt name of Hupnos, or sleep, in Greek. 40 days of whole bunch maceration in stainless steel, before vinification & ageing in 500l futs, transforms this dry white skin contact wine into a fresh, textural mouthful of minerality. A long wide wine with a rolling candied fruit finish. Generous & sublime.
