Winemaker Paulo is a one-man band with a humble ethos, oozing with integrity. He shares his attention between 4 hectares of vines & 3 hectares of hazelnuts, both grown on the lush red clay ‘terra rossa’ of Piemonte. These cheeky grapes were harvested from 15 year old vines, destemmed & pressed then fermented on their natural yeasts in steel for 2 weeks. After racking to get rid of gross lees the wine stayed on fine lees for 5 months. In late ’20 the wine was re-fermented in bottle by using must from late harvest grapes (same vineyard, same vintage) that had been kept chilled- only 900 bottles were made so she’s a bit of a treasure, to say the least! She’s light & refreshing with a lively mouthfeel & hint of salinity. Aromas of tangerine, grapefruit & elderflower combine with a toasty element for ultimate awesomeness!
