VITICULTURE + VINIFICATION
The Shiraz vines benefited from vertical shoot positioning in the appellation of Solapur, planted in soils of reddish black sandy loam at 986 meters above sea level. After hand harvesting at 17.8 brix, the free run juice was drained off after 12 hours of skin contact through cold soaking at 7 º. Primary fermentation was carried out at 11-12º for 10 days after inoculation with QA23 Lalvin yeast and the grapes were twice fermented using the Charmat method in stainless steel. Aged for 3 months in a pressurinsed tank, battonage was performed once a month before clarification with bentonite and cold stabilisation with cream of tartar. Filtration was completed at 0.45 microns.
The light pinkish rose colour reveals its freshness and younger character. Aromas of guava and grapefruit with floral undertones on the nose, the fruit forward entry is followed by a complex medium-bodied palate with a rich, soft and lengthy finish.
