This unique sparkling red is made from macerating the ripest, plumpest grapes of the field blend in the juice from the full vineyard harvest. After elevage for 6 months, where the raw fermented juice evolves towards it’s final form, she’s disgorged by hand before finishing fermentation in bottle. Grown predominantly on limestone with a little basalt, the red fruit notes & spices will partner a chocolate mousse just as awesomely as a cured sausage…talk about versatility! Chill her down a tad before serving & swirl in the sediment for extra texture…
