Vallone’s guiding principles in winemaking are excellence and innovation. They continue to experiment with winemaking techniques focusing on low yields and minimal human intervention with emphasis on quality of the fruit, careful extraction and low tannin.
VITICULTURE + VINIFICATION
2016 was a particularly good vintage for Cabernet Sauvignon with a large variance in diurnal temperatures.
The vines from clone CS15 on rootstock R110 were trained with double cordon vertical shoot positioning to receive maximum exposure to sun to ensure good phenolic ripening. The sloped vineyard, comprised of light, iron ricb, well draining soil, naturally stressed the vines for complexity of yield. Harvesting commenced at 25 brix and de-stemming was followed by manual
berry sorting before fermentation in stainless steel tanks. Malolactic fermentation was completed in French Oak barrels, no fining was done and filtration was through 1 micron. 24 months of ageing was completed in 60% new French Oak followed by 18 months in bottle.
Aromas of spices and blackberry are balanced with a hint of oak in this rich bodied wine. The full, round mouth feel delivers an integrated, silky finish.
